Today
I decided that I wanted to start baking again and with my Gran’s 80th
birthday party nearly here, I thought I’d start getting into the swing of
things again. I’m hoping to make her some cupcakes to of course go with her
present and with having lots of flour, egg & sugar to use up I decided to
make some brownies. I found a recipe from Good Food’s website for Chocolate Peanut Butter Brownies and suddenly realised that I still had half a tub of
Peanut Hottie so, decided on using that instead of the crunchy peanut butter
they advised to use. The results were amazing and so gooey, chocolaty and peanut
buttery (is that even a word?) So if you fancy on making some of these naughty
little treats then you can check the method & ingredients below.
Ingredients
225g Crunchy Peanut
Butter
(I used Peanut
Hottie – Peanut Butter Drink instead)
200g bar dark
chocolate, broken into pieces
280g soft light
brown sugar
3 medium eggs
100g self raising
flour
Method
1.
Set
aside 50g each of the peanut butter and chocolate. Head oven to 180c/160c
fan/gas 4 and line a 20 cm square baking tin with greaseproof paper. Gently
melt remaining peanut butter, chocolate all the sugar in a pan whist stirring
occasionally, until the sugar has just about melted. Turn off heat and use a wooden
spoon to beat in the egg one by one. Stir in the flour and scrape into the tin.
2.
Melt
reserved peanut butter in the microwave for 45 secs until runny and drizzle
over the brownie. Bake for 30-35 mins until there is a crust, but the middle
still seems slightly uncooked.
3.
Melt
reserved chocolate, drizzle over the brownie, and then cool in the tine before
cutting into squares.
As
I didn’t have any peanut butter to melt with the chocolate etc, I just used a
little bit of butter to make the mixture a bit wetter. This made it easier to
mix around in the saucepan as well. It's safe
to say that I’ve gotten my baking bug back and I can’t wait to start baking
more cakes, cookies and even bread soon!
